Thai Stir Fry Spice Mix
Spices:
Coriander, Cardamom, Nutmeg, Lemongrass, Ginger, Pepper and Chilli.
Use chicken breast.
Stir fry’s have become very popular mainly because they are easy to prepare. The better cuts of meat work best as they take very little cooking.
WE SUGGEST 2 TBLSPNS STIR FRY MIX TO 500G OF MEAT.
Place 1/4 cup of oil in a bowl along with 2tblspns of stir fry mix, add 500g of finely sliced chicken, mix until chickenis well coated. Spray a wok with oil, heat then add the chicken and any juices from bowl, stir fry until meat Is still a little pink. Remove from wok leaving behind juices, set aside whilst cooking your vegetables.
Add a little more oil to wok if needed, stir fry the vegetables until cooked but still crisp. During this process add any extras you’ve decided to use, here are a few suggestions.
- 2 cloves garlic, chopped
- 2 tspns. fresh chopped ginger
- 1 tblspn Fish Sauce
- 1 tblspn Lime juice
- Salt to taste
Finally add the cooked chicken and cooked noodles if using, stir through to warm . Before serving sprinkle with a handful of chopped fresh coriander leaf. For Barbequing combine oil and mix as above, add chicken, & coat well. Refrigerate for 1/2 hr before barbequing.
