Pasteurised raised free range pork, sea salt, brown sugar. Cold smoked.
What are Nitrates?
Nitrates (potassium nitrate or sodium nitrate) are used to speed up the process to cure bacon, ham and small goods in an effort to increase processing efficiencies and profit margins of small good manufacturers.
These nitrates are used to help increase the shelf life of cured meats and is also what gives bacon & ham its pink colour. This is why a leg of pork cured for ham will be pink, but the same leg of pork prepared as a roast will not be pink. It is the addition of these nitrates that give it the pink colour.
